The toll model
Your cattle. Your product. Our plant.
We do not buy cattle and we do not sell beef. Customers retain title to their livestock and finished product at every step. We are paid per head for harvest and per pound for fabrication, so your margin stays yours.
- You deliver cattle on a scheduled harvest date and supply your cut and packaging specifications.
- We harvest, chill, fabricate, package, and stage product for your freight.
- You receive hot and cold carcass weights, yield reporting, and lot-level documentation.

Harvest
Humane handling from receiving pens through the harvest floor, under continuous USDA inspection.
Chill & Cooling
Spray-chill and carcass coolers sized for full-day harvests, with controlled, documented chill curves that protect product quality and food safety. We cool and hold carcasses through the required chill process only; aging is not provided.
Fabrication & portioning
Primal, subprimal, and portion cutting on dedicated fabrication lines with trim control.
Grinding
Lean-point grinding to your specification, with chub or bulk packaging options.
Vacuum packaging & boxing
Vacuum sealing, labeling, and case-ready boxing for cold chain distribution.
Cold storage & load-out
Box coolers and two refrigerated docks for staged pickup and outbound freight.

Traceability from live animal to box label
Program beef only works when the paperwork holds up. We keep customer lots separate and carry identification the entire way through the plant.
